Midnight Snack Board

Tomato, pepper & caramelised onion hummus on crackers, with cocoa, cinnamon & peanut topped banana.

1 tomato, sliced & de-seeded into rings

1 handful rocket

1/4 red pepper, diced

2 tbsp caramelised hummus

Salt

Pepper

5 cream crackers

1/2 banana, sliced

1 pinch cocoa powder

1 pinch cinnamon

1 tbsp dry roasted peanuts

Spread hummus over crackers, to each add rocket, tomato ring, diced pepper, then season with salt & pepper.

Stack sliced banana, dust with cocoa powder & cinnamon, top with peanuts.
